KITHUL PRODUCTS IN SRI LANKA 

Kitul Honey and Kitul Jaggery Before the production of kithul honey, the secretion obtained from kithul flowers was called kithul toddy, and the ancient villagers used toddy in the past instead of alcohol. Kitul jaggery or Kitul honey This is not a common thing in Sri Lanka. Jasmine thrives in the central highlands of Sri Lanka and in the wetlands of the Southern Province, and is scattered throughout the country except in the driest parts of the island. Commercial production of jaggery products for both domestic consumption and export takes place mainly in the southern regions. Kithul production in Sri Lanka is traditionally done in these regions. But today the demand for kithul products is much higher than the supply. There are several reasons behind the shortage of kithul products, such as the shortage of tapable jaggery, the low involvement of a small number of people in the industry due to inherent risks, the huge efforts and the relatively insignificant consequences, and
